| 1. Melt butter, add chopped onion, zucchini, cook
gently. 2. Add all other ingredients except chicken. Cook just until flavors combine, stirring to mix. 3. Stuff about 50 gr of the filling under the skin in each chicken breast. Tuck edges of skin to make an attractive serving. 4. Place in a buttered baking dish. Place a small pat of butter on the top of each piece of chicken. Bake at 175° C for 30-35 minutes until golden brown. May be served hot are cut into slices and served cold. Also serve as Florentine Chicken by substituting spinach for the zucchini. Tip: A little whit wine may be added to the baking dish before adding chicken to make a special occasion dish. |
